Healthy Holiday Salad

Here is a healthy and delicious salad recipe that is perfect for any holiday gathering. It is packed with nutrients and is very simple to make. I hope you enjoy it as much as I do!

Salad Ingredients:
  • Spinach and/or Baby Kale

  • Arugula

  • Beets

  • Pomegranate

  • Avocado

  • Pecans

  • Nutritional Yeast (vegan) or sub goat cheese

Champagne Vinaigrette Ingredients:
  • 1/4 cup champagne vinegar

  • 1/2 cup extra-virgin olive oil

  • 1 TBSP Dijon mustard

  • 1 TBSP honey

  • 1 TSP lemon juice

  • 1 clove garlic or Garlic powder

  • Salt and pepper to taste

  • Chop lettuce, beets, and avocado

  • Place all ingredients in a bowl

  • Add dressing

  • Mix salad

  • Enjoy!
