Kentucky Derby Party

Kentucky Derby is next weekend! Are you hosting or attending a party and want some healthy options available? Then try some of these ideas!


Kentucky Derby Caprese Skewers


Ingredients:

  • Derby skewers (You can find a variety of fun and festive derby skewers on Amazon)

  • Cherry tomatoes

  • Cashew mozzarella cheese (I used Miyokos brand from Kroger-sub mozzarella if not dairy free)

  • Vegan pesto (sub pesto if not vegan)

  • Balsamic reduction

Instructions:

  • Drizzle balsamic reduction on a festive platter

  • Put a cherry tomato on the skewer

  • Add some folded basil to the skewer

  • Spread a little pesto at the bottom of the mozzarella

  • Add the mozzarella to the skewer with the pesto facing the basil

  • Add one more cherry tomato

  • Place the skewer on the platter

  • Repeat until you have enough skewers for your guests

  • Serve the skewers and enjoy!




Mint Julep Fruit Skewers


Ingredients:

  • Derby skewers

  • Fruit of choice

  • Mint

  • Non-fat plain Greek yogurt

  • Stevia or honey

Instructions:

  • Place fruit and mint on skewers

  • Put skewers on a festive platter

  • Mix stevia or honey into Greek yogurt to create a sweet dip for the fruit

  • Serve the derby fruit skewers with a yogurt dip and enjoy!





Kentucky Derby Veggie Kabobs


Ingredients:

  • Wooden derby skewers

  • Zucchini

  • Squash

  • Red Onion

  • Bell Peppers

  • Mushrooms

  • Brussels sprouts

  • Extra virgin olive oil

  • Basil

  • Oregano

  • Sea salt

  • Black pepper

Instructions:

  • Preheat the grill

  • Slice veggies and put them on the skewers

  • Whisk olive oil, basil, oregano, salt, and black pepper in a bowl; brush the mixture over vegetables

  • Place skewers on the grill and cook them for about 10-15 minutes, turning them half way through

  • Place skewers on a festive platter

  • Share kabobs with guests and enjoy!




"Talk Date to Me" Derby Dessert


Ingredients

  • Derby picks

  • Medjool dates

  • Peanut butter

  • Cocoa nibs

  • Walnuts

Instructions

  • Cut Medjool dates in half

  • Put peanut butter in the middle of the date

  • Top with cocoa nibs and chopped walnuts

  • Place dates in the freezer until ready to serve

  • Put derby skewers in the middle of the dates

  • Put them on a festive platter, serve to guests, and enjoy!
