Avocado Pesto Pasta

Here's a recipe for your next "Italian" dinner night. It is delicious; healthy; and simple to make. I hope you enjoy it as much as I do!


INGREDIENTS:

  • Zucchini noodles (You could also opt for a whole wheat or "Banza" pasta)

  • 1 avocado

  • 2 TBSP of olive oil

  • 1.5 cups of fresh basil (I use basil seasoning if I don't have this stocked in the kitchen)

  • 1 cup frozen spinach (thawed)

  • 3 cloves garlic (I use garlic powder if I don't have this stocked in the kitchen)

  • 1/4 cup cashews

  • 2 TBSP of lemon juice

  • Pepper and sea salt to taste

  • Sundried tomatoes (optional)

  • Artichokes (optional)

  • Nutritional yeast (optional)


INSTRUCTIONS:

  • Add all ingredients (minus the noodles) into a food processor or blender

  • Blend until it is a smooth creamy sauce

  • Add to your pasta of choice

  • Top with sundried tomatoes; artichokes; and nutritional yeast (optional)
