Meatless Monday: Zoodles Recipe

Happy Monday! If you are looking to have a “Meatless Monday“ meal tonight this zoodle recipe is quick and simple to make; nutritious; and is very delicious and satisfying. I hope you enjoy it as much as I do!


  • zucchini (spiralized)

  • extra virgin olive oil

  • marinara of your choice (I personally like “Primal Kitchen‘s" garlic marinara because of the minimal and healthy ingredients. Consider looking at the calories; sodium; and sugar on the label before choosing the best one for you)

  • mushrooms

  • artichokes

  • capers

  • kale

  • nutritional yeast (topping)

  • basil (topping)


  • rinse and chop mushrooms and kale

  • sauté mushrooms; artichokes; capers; and kale with marinara sauce in a pan

  • in another pan sauté zucchini with a little extra virgin olive oil

  • once zucchini is cooked, drain and place in a bowl

  • pour veggie marinara on top of the “zoodles”

  • top with nutritional yeast & basil

  • enjoy!

FYI- If I'm cooking this for myself I stick to the serving size of 1/2 cup of marinara and load up on the veggies to increase the nutrients and reduce the sodium and calories. If you are cooking for multiple, you can always times this serving size by the amount of people.
