Massaging kale?… It might sound strange, but there is good reason behind it. The point of massaging the kale is to infuse it with lemon juice and olive oil. When it soaks up these nutrients, it breaks down the tough and bitter characteristics, which makes it easier to chew and digest, and much more flavorful and delicious…Kale yeah to that!
Here is one of my favorite kale salads to make. You can have it as a meal or share it as a side with your family and friends. I hope you enjoy it as much as I do!
Ingredients:
1 bunch of kale
1 tbsp of extra virgin olive oil
1 tsp of lemon juice
A dash of sea salt
1 tbsp of dried black currants
1 tbsp of nutritional yeast
1/3 cup roasted chickpeas (I like using biena chickpea snacks to save time)
1 tbsp of tahini dressing
1/2 an avocado
Instructions:
Rinse and finely chop kale
Add olive oil, lemon juice, and salt
Massage kale for a few minutes
Add black currants, chickpeas, nutritional yeast, and tahini dressing
Toss salad
Top with avocado
Enjoy as a meal or as a side!
