Salads are a great way to get some veggies in and are packed with nutrients and fiber. They also can be lower calorie, however sometimes the cheese, dressing, croutons, and additional toppings add up! I don't know about you but I love a Caesar salad, but I could do without some of the calories if I'm trying to opt for something "healthier". Below is one of my go to healthier "Caesar" salads. It has more nutrients and fiber and less fat and calories, and trust me it's just as delicious!
RECIPE (1 serving size):
Handful of spinach
Handful of romaine
1 TBSP of nutritional yeast
1 TBSP of sundried tomatoes
1/4 cup roasted chickpeas (You can roast these in the oven or buy them prepared. I love using the "Biena" brand chickpeas. This is a great way to add more protein and fiber versus using croutons)
1-2 TBSP of Tahini Dressing (Lemon Tahini Dressing from Amazon and Tomato Head Tahini Dressing are my current favorites)
INSTRUCTIONS:
Chop up spinach and romaine finely
Add ingredients into a medium to large mixing bowl
Toss salad until everything is mixed and the lettuce has absorbed the dressing
Put on a plate and ENJOY!
