Avocado toast has been trending, and for good reason! It's nutritious; delicious; and simple to make. Thanks to this combo, you can find it at a lot of restaurants now, which makes for the perfect brunch option! Toast is one of my go to's for breakfast. Adding fruits; veggies; various healthy fats; and protein, can be a great way to add flavor and get more nutrients in. You can also pick and choose so you can satisfy both those sweet and salty cravings. Below you will find some recipes for what I call "elevated toast". I hope you enjoy them as much as I do!
SAVORY TOASTS:
Chickpea Avocado Toast:
Ezekiel toast
Avocado
Everything but the bagel seasoning (you can find this at Trader Joe's or Amazon)
Nutritional yeast
"Biena" chickpea snacks (I usually order these in bulk off Amazon)
Instructions:
Spread mashed avocado on toast
Sprinkle nutritional yeast and EBTB seasoning
Top with chickpeas
Enjoy!

Mushroom Avocado Toast:
Ezekiel toast
Avocado
Baby portabella mushrooms
Extra virgin olive oil
Balsamic vinegar
Garlic
Parsley
Nutritional yeast
Instructions:
Spread mashed avocado on toast
Sauté mushrooms with extra virgin olive oil; balsamic vinegar; garlic; parsley; and nutritional yeast
Top toast with balsamic mushrooms

Sun-Dried Tomato Spinach Toast:
Ezekiel toast
Hummus of choice (I personally love Ithaca lemon dill hummus)
Sun-dried tomatoes
Spinach
Salsa
Extra virgin olive oil
Garlic powder
Onion powder
Turmeric powder
Nutritional yeast
Instructions:
Spread hummus on toast
Sauté spinach; sun-dried tomatoes; seasonings; and salsa in a pan with a little extra virgin olive oil
Top toast with veggies

Avocado Beet Toast:
Whole wheat toast (pictured is simple truth organic multigrain bread)
Ithaca beet hummus
Avocado
Cilantro (optional)
Instructions:
Spread hummus on toast
Slice avocado and place on toast
Top with cilantro if desired

Tomato Basil Avocado Toast:
Whole wheat toast (pictured is 1/2 of Killer Dave’s Sprouted Bun)

Sea Salt
Pepper
Tomato
Basil
Balsamic vinegar
Instructions:
Spread avocado on toast
Sprinkle a little salt & pepper
Top with tomato and basil
Drizzle a little balsamic vinegar

Pizza Toast:
Simple truth organic multigrain toast
Marinara (I personally love Primal Kitchen's tomato basil marinara)
Cherry tomatoes
Sun-dried tomatoes
Nutritional yeast
Basil
vegan cashew "mozzarella" cheese
Instructions:
Spread marinara on toast
Top with tomatoes; vegan or non-vegan mozzarella cheese; nutritional yeast
Broil in oven for just a few minutes
Top with fresh basil

Peanut Butter Banana Toast:

Honey (optional)
Instructions:
Spread 1 TBSP of peanut butter on toast
Top with slices of banana
Drizzle honey

Strawberries
Coconut
Instructions:
Spread 1 TBSP of almond butter on toast
Top with sliced strawberries
Sprinkle coconut flakes

Blueberry Cinnamon Toast:
Cinnamon Raisin Ezekiel toast
Almond butter
Blueberries (I personally like to use frozen blueberries)
Cinnamon
Instructions:
Spread 1 TBSP of almond butter on toast
Top with blueberries
Sprinkle some cinnamon

PB&J Toast:
Ezekiel toast
Peanut butter
Frozen grapes
Instructions:
Spread 1 TBSP on toast
Top with frozen grapes, or de-thaw the grapes; muddle them; and spread on top of the toast
