Egg White Veggie Mug Omelet

Ingredients:

  • 4 TBSP liquid egg white

  • 1 TBSP nutritional yeast (sub low fat cheese if desired)

  • Peppers

  • Spinach

  • Sun-dried tomatoes

  • Pepper

  • Salsa


Instructions:

  • Put egg whites in a mug

  • Add nutritional yeast and pepper

  • Chop veggies and add them to the mug

  • Stir the ingredients

  • Microwave for 1 minute

  • Stir

  • Microwave for 1 more minute

  • Top with salsa

  • Pair with avocado toast to make a well balanced breakfast (optional)
