Happy Wednesday Everyone!
One of the biggest challenges I hear in the health coaching world is not having enough time or energy to prepare a healthy lunch during the work week, and I totally understand that! One little Wellness Wednesday tip for you is to consider keeping healthy frozen items such as veggies, fruit, and quinoa stocked in your freezer at all times. Frozen fruits and vegetables are more affordable and will prevent waste. Also, since they are frozen immediately after harvesting, they contain just as much or even more nutrients than fresh fruits and veggies. Just make sure to check the label for any additives.

Ingredients:
1 bag of frozen quinoa (I personally like the Simple Truth brand)
1 can of no salt added chickpeas
1 bag of frozen veggies and or raw veggies of choice
1 avocado
Hummus
Tahini dressing
Instructions:
Microwave quinoa & veggies
Strain chickpeas & slice avocado in half
Put 1-2 Tbsp of hummus in the center of a bowl
Heat up chickpeas for about 30 seconds
Place 1/2 cup quinoa, 1/2 cup chickpeas, veggies, and 1/2 an avocado in the bowl
Drizzle tahini dressing on the bowl
Enjoy your quick and nutritious lunch!
FYI-If you have more time, roasting the veggies and chickpeas make for a delicious dinner as well. All you need to do is defrost the veggies, toss them with olive oil and seasonings such as garlic and onion powder, sea salt, and pepper, and then cook them in the oven for about 20-30 minutes on 425 degrees.
